Vegan party potatoes originally from Vegan Punks in the Kitchen
You can double this for a good sized casserole; this recipe fed two adults as a meal.
Ingredients
Topping Ingredients
- 1 1lb bag of cubed hash browns with peppers and onions (Potatoes o'brian)
- 1/4 cup non-dairy butter
- 1/2 a medium onion, diced
- 4 oz non-dairy sour cream
- 1 package of Teese creamy cheddar cheese
- Salt and pepper to taste
Topping Ingredients
- 1 cup cornflakes
- 1/4 cup melted non-dairy butter
- Preheat oven to 350 degrees.
- Melt non-dairy butter in a large pan.
- Add the hash browns and onion and cook until onions are translucent and potatoes are no longer frozen.
- Add the sour cream and Teese and combine everything together.
- Transfer the whole mixture to a square baking dish.
- Combine cornflakes and the other 1/4 cup of melted butter and sprinkle over the top.
- Bake for 20-30 minutes or until brown and heated through.
