vegan party potatoes Recipe
You can double this for a good sized casserole; this recipe fed two adults as a meal.
Ingredients
  • 1 1lb bag of cubed hash browns with peppers and onions (Potatoes o'brian)
  • 1/4 cup non-dairy butter
  • 1/2 a medium onion, diced
  • 4 oz non-dairy sour cream
  • 1 package of Teese creamy cheddar cheese
  • Salt and pepper to taste

Topping Ingredients
  • 1 cup cornflakes
  • 1/4 cup melted non-dairy butter
  1. Preheat oven to 350 degrees.
  2. Melt non-dairy butter in a large pan.
  3. Add the hash browns and onion and cook until onions are translucent and potatoes are no longer frozen.
  4. Add the sour cream and Teese and combine everything together.
  5. Transfer the whole mixture to a square baking dish.
  6. Combine cornflakes and the other 1/4 cup of melted butter and sprinkle over the top.
  7. Bake for 20-30 minutes or until brown and heated through.
